Technical notes
Vinification: The grapes are harvested and delivered to the cellars, where they are destemmed and fermentation begins in wooden vats.
Aging: Shortly after the sugars had been completely fermented, the wine was racked and placed in an oak barrel where it remained for a period of 30 months. After that, the aging process continued in the bottle for 8 months before the wine was released for sale.
Tasting notes
On the nose, it presents fresh, mentholated notes attributable to the terroir from which it originates, fading into spicy hints. On the palate, it shows good verticality, depth, and vibrant tannins that require time to express themselves fully.
Pairings
Barolo par excellence pairs well with important dishes, such as traditional Piedmontese meat main courses and medium-long aged cheeses. But that’s not all. If we explore the possibilities of world cuisine, we can come up with some original pairings: from Japanese Shabu Shabu (beef with steamed vegetables) to Hungarian Tokany or crispy Indian Samosas. If you like, it can also accompany after dinner conversation or a “special” toast!
