Technical notes

Vinification: the grapes are brought into the cellar in 20 kg crates and are pressed immediately to obtain the must, which is left to decant naturally for 24 hours at 10 °C before fermentation begins. When the fermentation is complete, the wine are aged on fine lees for four months. Bottling takes place before summer.

Ageing: three years in the bottle.

Ideal with fish starters, light pasta dishes and risottos.
