Technical notes
The grapes, harvested by hand into small crates, are pressed to extract the must, which, after settling for 24 hours at 10°C, undergoes alcoholic fermentation. Once fermentation is complete, the wine is racked to remove the coarser solids, then aged on fine lees for about a year before bottling. It continues to mature in this way for about 24 months before being ready to drink.
Tasting notes
A nearly luminous straw-yellow color with a very fresh aroma featuring notes of white peach, citrus, and rosemary, which, over time, blend with the mineral notes typical of this grape variety. The excellent acidity that characterizes all great Rieslings envelops the palate without being harsh, and its rich savory character contributes to a long, intense finish.
Pairings
It pairs naturally with raw seafood, seared scallops, spaghetti with clams, herb crusted trout, spring risottos with asparagus, fresh goat cheese, and, on an international note, sushi and sashimi, smoked fish, and Asian dishes featuring citrus fruits and aromatic herbs.
