Technical notes
The hand-picked grapes are placed in small crates and inserted whole directly into the press so that the skins are best preserved. We begin by gently pressing the grapes, immediately separating the must from the skins. Fermentation is conducted at low temperature (18-20° C) in stainless steel tanks, after refrigeration and static decantation of the must. The aging takes place in stainless steel for about 2-3 months, during which the wine remains in contact with the fine lees of the yeasts. After a cold stabilization process in spring, the wine is finally bottled.
Tasting notes
This is a white wine with good personality, straw yellow in color with greenish highlights. The nose is broad, with an intense bouquet reminiscent of acacia flowers, lemon, lily of the valley and unripe apple. The taste is pleasantly dry, full and savory.
Pairings
Ideal with seafood entrees, from light starters of crudités and sashimi to fried squid. Also ideal with pasta dishes, from seafood risotto to linguine with Genovese pesto or warm vegetable soups. Ideal companion to baked or grilled fish main courses or light lemon-based white meats. Goes well with grilled or battered vegetables and mild cheeses.
