Vinification: fermentation in stainless steel vats for 7-10 days at a temperature of 24-25 °C, followed by a rapid malolactic fermentation.
Ageing: a short stay in stainless steel tanks precedes bottling, which takes place in the spring following the vintage. The wine is released after 1-2 months of ageing.
It is excellent served with hot starters, pasta dishes, vegetables and not over-elaborate meats.
