Technical notes
The grapes are harvested by hand and placed in small crates, then transported whole to the press so that the skins are preserved as well as possible. After gentle pressing, the must is stored for about 24 hours in steel tanks, where natural decanting separates the coarser solid particles, resulting in a clearer must. Alcoholic fermentation begins within 24-48 hours and lasts for about 30 days at a temperature of 15-17°C. Once fermentation is complete, after racking, the wine begins a maturation period that lasts for about 10 months on its fine lees with periodic bâtonnage, with the aim of increasing its aroma and palatability. At the end of this period, the wine is ready to be bottled to perfect its refinement before being tasted.
Tasting notes
In the glass, it has an elegant golden color, enriched with greenish reflections that enhance its brightness. On the nose, the bouquet is rich and aromatic, evoking the scents of exotic fruits, alongside notes of white-fleshed fruits, including pear and apple. The sapidity is accentuated, thanks to the mineral properties of the terroir from which it comes. On the palate, its pleasant freshness blends with an enveloping and harmonious texture, offering a balanced, round, and refined sensation. The long finish leaves a refined aftertaste, recalling the aromatic complexity and inviting another sip.
Pairings
Derthona pairs perfectly with rich recipes with authentic flavors, such as fish dishes like razor clams au gratin, anchovies, and sweet and sour shrimp. But also Italian appetizers such as carpaccio and creamed cod; main courses such as artichokes, roasted peppers, and grilled eggplant; battered vegetables; and hard and blue cheeses such as Stilton. Exploring traditions from around the world, we find Tuna Mornay in Australia and Coquilles Saint-Jacques and Gratin Dauphinois (made with potatoes and crème fraîche) in France. In Portugal, there is Arroz de Marisco and Massa à Lavrador (a rustic dish with pork, bacon, and vegetables). In Malaysia, there is Laska (spicy noodle soup), and in Japan, dishes cooked using the tempura method. In Peru, there is Pachamanca meat and vegetables, cooked on stone, and in Ecuador, there is Ceviche de Camarón, fresh shrimp marinated in lime juice, onion, coriander, and tomato.
