Technical notes
Vinification: The grapes, harvested manually and placed in crates, are put into wooden vats, alternating layers of destemmed grapes with layers of whole bunches. As soon as fermentation begins, light and delicate daily punching down is carried out to ensure that the cap of skins remains constantly moist, but avoiding breaking the whole berries in the central area. During fermentation, the must is enriched with sugars from the broken grapes, which release their juice, which is why fermentation proceeds at a slow but steady pace, after which racking takes place. Following pressing, part of the must contained in the intact grapes completes its fermentation and, after a few days of static decanting, the wine is separated from the coarser solids by racking.
Aging: It has a total aging period of about 40 months, of which about 30 are spent in oak barrels, 4 to 6 in cement tanks, and the remainder in the bottle.
Tasting notes
Garnet red color with very slight purple reflections. The nose is fresh and complex, offering mentholated sensations accompanied by a delicate spicy note. On the palate, it reveals an excellent structure supported by lively acidity and perfectly integrated tannins, which give the wine great balance and a long finish.
Pairings
Barolo is the perfect pairing for important dishes, such as traditional Piedmontese meat main courses and medium-long aged cheeses. But that’s not all. If we explore the possibilities of world cuisine, we can find a range of original pairings: from rack of lamb with herbs to lamb tagine, Peking duck, or contemporary Asian dishes based on meat and mushrooms. If you like, it can also accompany after-dinner conversation or a “special” toast!
