Technical notes
Vinification: Once fully ripe, the grapes were transported to the winery in small crates to preserve their integrity and immediately destemmed in wooden vats where fermentation began. At the end of this phase, the must was left in contact with the skins for a few more days to extract all the noble substances that contributed to its preservation during aging.
Aging: The latter first took place in oak barrels for 30 months and continued for about 8 months in bottles in a dark, cool environment at a controlled temperature.
Tasting notes
A lively, bright garnet red color with good intensity. The nose reveals hints of small red fruits reminiscent of blackberries and morello cherries. On the palate, it is rich and full bodied, with sweet tannins and a long finish. A great Barolo that combines complexity and integrity with excellent elegance and harmony, reflecting the territory from which it comes.
Pairings
Barolo is the perfect pairing for important dishes, such as traditional Piedmontese meat main courses and medium-long aged cheeses. But that’s not all. If we explore the possibilities of world cuisine, we can come up with some original pairings: from pulled pork made in the USA to Mexican chili meat, to a falafel dish from Turkey. If you like, it can also accompany post dinner conversation or a “special” toast!
