Ageing: Ageing: 3 years on average in large casks (oak from Slavonia and the centre of France) prior to being bottled and kept for a further period of maturations which, though depending on the vintage, will never last less than 12 months. Keeping qualities: the single-vineyard Barolos reach their peak 8-10 years after the harvest, but their life will vary considerably depending on the vintage.
Pairings
Ideal with big red meat dishes and medium or mature cheeses, it can also make for pleasant after-dinner company.
