Technical notes
Vinification:the fermentation is traditional, carried out in stainless steel vats, with a duration of 12-15 days at a controlled temperature. The wine is left on the skins in a “submerged cap” for a further 25-30 days, to optimize the extraction phase of the polyphenolic substances. According to the law, in order to be able to boast the term “Riserva”, Barolo must ensure at least 5 years of refinement before being released for consumption. The first 3 years of aging take place in oak barrels (from Slavonia and Allier). The next 2 years, in the bottle. However, the refinement varies depending on the characteristics of the vintage, but is never less than 62 months, of which at least the first 24 months of refinement take place in barrels.
