Technical notes
Vinification:the fermentation is traditional, carried out in stainless steel vats, with a duration of 12-15 days at a controlled temperature. The wine is left on the skins in a “submerged cap” for a further 25-30 days, to optimize the extraction phase of the polyphenolic substances. According to the law, in order to be able to boast the term “Riserva”, Barolo must ensure at least 5 years of refinement before being released for consumption. Of these, the first year is spent in barriques and the following two continue in large oak barrels (Slavonian and Allier).
Ageing:it depends on the characteristics of the vintage but is never less than two years.
Organoleptic notes
Ruby highlights still show on its deep garnet red colour, while its intense, clear-cut nose hints at black cherry, tobacco, dried mushrooms, spices such as nutmeg and pepper, and balsamic aromas conjuring up resin and mint. Sweet, velvety tannins blend nicely on its warm, smooth taste with fresh acidity, helping to ensure a long finish.
Pairings
Ideal with big red meat dishes and medium or mature cheeses, it can also make for pleasant after-dinner company.
