Technical notes
Vinification: according to tradition fermentation is carried out for 15 days at a controlled temperature (27-28 °C) in stainless steel tanks with floating cap and frequent pumping over, in order to optimise the extraction of polyphenolic substances followed by a post-fermentation maceration on its own skins for about a week.
Ageing: after 36 months in oak casks and 12 months in concrete, the wine is ready to be bottled, continuing its ageing 12 more months or so . A wine capable of expressing its qualitative characteristics right from the start, with an ageing potential over time, up to 25/30 years.
Tasting notes
The colour is garnet with slight orange nuances. The nose is intense, with dried roses notes. The palate is full , vibrant and austere, accordingly to the long shelf life typical of the greatest Barolo.
Pairings
The Barolo par excellence goes well with important dishes, such as traditional Piedmontese meat main courses and medium-long-aged cheeses. But not only that, if we explore the possibilities of world food and wine we can range in original combinations: from the French boeuf bourguignonne up to Asia with Nasi Goreng, passing through Canada and its smoked meat from Montréal. If you like, it can also accompany the conversation at the end of the meal or a “special” toast!
